15 Minute Instant Pot/Pressure Cooker Taco Mince

Ingredients
  

  • 1 onion
  • 1 each red bell pepper
  • 3 cloves garlic
  • 2 large fresh tomatoes (diced)
  • 1 tablespoon olive oil
  • 1.6 lbs ground beef or ground lamb
  • 1 teaspoon oregano
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1 teaspoon dried basil
  • 1 teaspoon ground cumin
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon black pepper
  • chopped cilantro (for garnish)
  • chopped salad onion (for garnish)

Equipment

  • Instant Pot or Pressure Cooker
  • Cutting Board & Knife
  • Measuring spoons
  • Wooden spoon

Method
 

  1. Begin by finely chopping the onion, red bell pepper, and garlic. Dice the fresh tomatoes as well.
  2. Turn your Instant Pot to the sauté setting. Add the olive oil and let it heat up for about a minute. Add the chopped onion and red bell pepper. Sauté for 2-3 minutes until they begin to soften. Add minced garlic and sauté for an additional minute until fragrant.
  3. Add the ground beef or lamb to the pot. Use a wooden spoon to break it up as it cooks. Sauté until browned, about 5 minutes.
  4. Once the meat is browned, stir in the diced tomatoes and all spices. Mix everything well to ensure the spices are evenly distributed.
  5. Close the lid of the Instant Pot and set it to pressure cook for 5 minutes. Perform a quick release of the pressure when done.
  6. Open the lid, stir the taco mince, adjust seasoning if needed, and serve hot, garnished with cilantro and salad onion.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 4 days.
  • Freeze the taco mince in a freezer-safe container for up to 3 months.
  • For a lighter option, substitute ground turkey or chicken.
