Ingredients
  

For the Soup:
  • 2 tablespoons olive oil for sautéing
  • 2.5 cups mirepoix diced onions, carrots, and celery
  • 2 packages long grain and wild rice mix including seasoning
  • 1 carton chicken broth 32-ounce plus 1 cup water
  • 2 cups heavy cream for creaminess
  • 2 cups diced rotisserie chicken for protein
  • to taste hearty buttered bread optional for serving

Method
 

Cooking Steps:
  1. Step 1: Sauté the Mirepoix - In a large pot, heat the olive oil over medium heat. Add the mirepoix and sauté for about 5 minutes, or until the vegetables are tender and fragrant.
  2. Step 2: Add the Rice Mix - Stir in the long grain and wild rice mix, including the seasoning packets. Cook for an additional 2 minutes.
  3. Step 3: Pour in the Broth and Water - Add the chicken broth and 1 cup of water. Bring to a boil, then reduce heat to low and simmer for 20-25 minutes.
  4. Step 4: Stir in the Cream and Chicken - Once the rice is cooked, stir in the heavy cream and diced rotisserie chicken. Heat through for an additional 5-10 minutes.
  5. Step 5: Serve and Enjoy! - Ladle the soup into bowls and serve hot, optionally with hearty buttered bread.

  • Use pre-chopped mirepoix to save time.
