Ingredients
  

  • 1 sweet potato peeled
  • 1 white potato peeled
  • 1 large carrot peeled
  • 1 red beet peeled
  • 1 golden beet peeled
  • 2 tablespoons olive oil (2 teaspoons for each batch)
  • Kosher salt to taste
  • Ground black pepper to taste
  • 1 teaspoon smoked paprika (optional)

Method
 

  1. Start by peeling all your vegetables: the sweet potato, white potato, carrot, red beet, and golden beet. Once peeled, slice them thinly using a mandoline slicer or a sharp knife. Aim for about 1/8 inch thickness to ensure even cooking.
  2. In a mixing bowl, combine the sliced veggies with the olive oil, kosher salt, ground black pepper, and smoked paprika if using. Toss well until all the slices are evenly coated.
  3. Preheat your air fryer to 380°F (193°C) for about 5 minutes. This step is crucial for achieving that perfect crunch.
  4. Place the seasoned veggie slices in the air fryer basket in a single layer. It’s okay if they overlap slightly, but avoid overcrowding the basket. Cook for about 15-20 minutes, shaking the basket halfway through to promote even cooking. Keep an eye on them to prevent burning, as cooking times can vary based on the thickness of the slices and the model of your air fryer.
  5. Once the veggie chips are golden and crispy, remove them from the air fryer and let them cool on a wire rack. This cooling step will help them maintain their crispiness. Enjoy them as is or serve with your favorite dip!
