- Preheat your oven to 400°F (200°C) to ensure it’s hot enough to give the chicken a beautiful, golden crust.
- If your chicken breasts aren’t thinly sliced, use a meat mallet to pound them to about 1/2 inch thick. This ensures they cook evenly and remain juicy.
- In a mixing bowl, combine the Greek yogurt, kosher salt, and pepper. Coat each chicken breast in this mixture, ensuring they are fully covered. This will keep the chicken moist during cooking.
- In another bowl, mix the sliced almonds with olive oil, chopped sweet onion, thyme, and additional salt and pepper. This mixture will create a flavorful crust that adheres to the chicken.
