Ingredients
  

For the Chicken:
  • 1 pound thinly sliced chicken breasts or pounded chicken breasts
  • 1 cup plain Greek yogurt
  • 1 teaspoon kosher salt
  • 1 teaspoon pepper
  • 1 cup sliced almonds
  • 1 teaspoon olive oil
  • 1 cup sweet onion, chopped
  • 1 teaspoon fresh thyme, minced or dried thyme
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon pepper
  • 1/2 cup cherry preserves
  • 3 tablespoons balsamic vinegar

Method
 

Preparation Steps:
  1. Preheat your oven to 400°F (200°C) to ensure it’s hot enough to give the chicken a beautiful, golden crust.
  2. If your chicken breasts aren’t thinly sliced, use a meat mallet to pound them to about 1/2 inch thick. This ensures they cook evenly and remain juicy.
  3. In a mixing bowl, combine the Greek yogurt, kosher salt, and pepper. Coat each chicken breast in this mixture, ensuring they are fully covered. This will keep the chicken moist during cooking.
  4. In another bowl, mix the sliced almonds with olive oil, chopped sweet onion, thyme, and additional salt and pepper. This mixture will create a flavorful crust that adheres to the chicken.
  5. Take each marinated chicken breast and press the almond mixture onto both sides, ensuring an even coating. Place the coated chicken breasts on a baking sheet lined with parchment paper.
  6. Bake in the preheated oven for 20-25 minutes or until the chicken is cooked through and the almond crust is golden brown.
  7. While the chicken is baking, combine cherry preserves and balsamic vinegar in a small saucepan. Heat over medium heat until the mixture is bubbly and slightly thickened, stirring occasionally.
  8. Once the chicken is done, drizzle the cherry-balsamic glaze over the top and serve immediately. Enjoy your Almond Crusted Chicken with a side of roasted vegetables or a fresh salad!

Notes

  • For best results, marinate the chicken for at least 30 minutes.
