- Step 1: Preheat your oven to 350°F (175°C).
- Step 2: In a large mixing bowl, combine the almond flour, baking powder, baking soda, sea salt, and ground cinnamon. Whisk until well blended.
- Step 3: In another bowl, mix the melted butter (or coconut oil), maple syrup, and vanilla extract. Then, add the beaten egg and whisk until smooth.
- Step 4: Pour the wet mixture into the bowl with the dry ingredients. Use a spatula to gently fold everything together until just combined.
- Step 5: Fold in the dark chocolate chips and chopped walnuts.
- Step 6: Using a cookie scoop or spoon, drop heaping tablespoons of cookie dough onto a parchment-lined baking sheet.
- Step 7: Bake for 10-12 minutes, or until the edges are lightly golden.
- Step 8: Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
Notes
- Store cookies in an airtight container for up to 5 days.
- Freeze baked cookies for up to 3 months, thaw at room temperature or warm in the oven.
- The cookie dough can also be frozen for up to 2 months.
