  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1/2 tsp sea salt
  • 1/2 tsp ground cinnamon
  • 1 large egg, lightly beaten
  • 1/2 cup unsalted butter or coconut oil, melted
  • 3 tbsp pure maple syrup
  • 1 tsp pure vanilla extract
  • 1/2 cup dark chocolate chips
  • 2/3 cup raw walnuts, chopped

Method
 

Instructions
  1. Step 1: Preheat your oven to 350°F (175°C).
  2. Step 2: In a large mixing bowl, combine the almond flour, baking powder, baking soda, sea salt, and ground cinnamon. Whisk until well blended.
  3. Step 3: In another bowl, mix the melted butter (or coconut oil), maple syrup, and vanilla extract. Then, add the beaten egg and whisk until smooth.
  4. Step 4: Pour the wet mixture into the bowl with the dry ingredients. Use a spatula to gently fold everything together until just combined.
  5. Step 5: Fold in the dark chocolate chips and chopped walnuts.
  6. Step 6: Using a cookie scoop or spoon, drop heaping tablespoons of cookie dough onto a parchment-lined baking sheet.
  7. Step 7: Bake for 10-12 minutes, or until the edges are lightly golden.
  8. Step 8: Cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.

Notes

  • Store cookies in an airtight container for up to 5 days.
  • Freeze baked cookies for up to 3 months, thaw at room temperature or warm in the oven.
  • The cookie dough can also be frozen for up to 2 months.
