Ingredients

  • 2 cups all-purpose flour
  • 0.75 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup unsalted butter at room temperature
  • 1.5 cups light brown sugar
  • 0.5 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 1 cup sweetened shredded coconut
  • 1 cup semisweet or bittersweet chocolate chips
  • 1 cup coarsely chopped almonds

Equipment

  • Mixing bowl
  • Electric mixer
  • Baking Pan (9x13 inch)
  • Parchment paper
  • Measuring cups and spoons

Method

  1. Preheat your oven to 350°F (175°C).
  2. Line a 9x13 inch baking pan with parchment paper.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
  4. In a large mixing bowl, beat the butter with light brown sugar and granulated sugar until light and fluffy.
  5. Add the eggs one at a time, mixing well after each addition. Mix in the vanilla extract until fully combined.
  6. Gradually add the dry ingredient mixture to the wet ingredients, mixing just until combined.
  7. Gently fold in the coconut, chocolate chips, and chopped almonds until evenly distributed.
  8. Spread the batter evenly into the prepared baking pan and bake for about 25-30 minutes.
  9. Let cool in the pan for 10 minutes, then lift out using the parchment paper and cool completely on a wire rack before slicing.

Notes

  • Ensure butter is at room temperature for the best texture.
  • Don’t overbake; keep an eye on them as they can go from golden to overcooked quickly.
  • Letting the bars cool completely before slicing is crucial for clean edges.
