  • 1 Ripe California Avocado seeded, peeled, sliced, and at room temperature
  • 3 ounces cream cheese at room temperature
  • 1 tablespoon fresh lemon juice
  • Kosher salt to taste
  • 1 tablespoon finely sliced chives
  • 1 tablespoon chopped dill
  • Freshly ground black pepper to taste
  • Plain and/or everything bagels cut in half and toasted
  • Smoked salmon or lox
  • Thinly sliced red onion
  • Capers
  • Fresh dill for garnish
  • Lemon wedges for serving

Method
 

  1. In a mixing bowl, combine the ripe avocado, cream cheese, and lemon juice. Use a fork to mash the avocado until it reaches a smooth consistency. Season with kosher salt and freshly ground black pepper to taste. Fold in the finely sliced chives and chopped dill.
  2. Slice your bagels in half and toast them until they are golden brown and crispy. You can use a toaster or an oven, depending on your preference.
  3. Spread a generous amount of the herbed avocado mixture on each toasted bagel half. Layer on slices of smoked salmon, followed by thinly sliced red onion and a sprinkle of capers. Garnish with fresh dill and serve with lemon wedges on the side for an extra zing.
