Ingredients
  

For the Chicken:
  • 1.5 lbs chicken tenderloins cut into 1-inch pieces
  • 0.75 cup flour
  • 1.25 cups panko breadcrumbs
  • 0.5 cup fine cornmeal
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 0.25-0.5 teaspoon cayenne pepper (adjust to taste)
  • 2 large eggs
  • 0.25 cup Frank's Hot WINGS Sauce (not regular hot sauce)
  • 2 tablespoons honey
  • 0.25 cup mayonnaise (light version recommended)
  • 0.25 cup nonfat Greek yogurt (may substitute mayonnaise)
  • 1 teaspoon Frank's Hot WINGS Sauce for dipping

Method
 

Instructions:
  1. Step 1: Preheat your oven to 400°F (200°C).
  2. Step 2: Cut the chicken tenderloins into 1-inch pieces.
  3. Step 3: In one bowl, combine the flour, salt, paprika, black pepper, onion powder, garlic powder, chili powder, cumin, and cayenne pepper. In another bowl, whisk together the eggs, Frank's Hot WINGS Sauce, and honey. In a third bowl, mix the panko breadcrumbs and cornmeal together.
  4. Step 4: Dip each piece of chicken into the flour mixture, then into the egg mixture, and finally coat it with the panko and cornmeal mixture.
  5. Step 5: Line a baking sheet with parchment paper and spray it lightly with cooking spray or oil. Place the breaded chicken pieces in a single layer on the sheet.
  6. Step 6: Bake the chicken in the oven for about 20-25 minutes, or until golden brown and cooked through.
  7. Step 7: Mix the mayonnaise, Greek yogurt, and Frank's Hot WINGS Sauce in a small bowl for a dipping sauce.
  8. Step 8: Once the chicken is done, remove it from the oven, let it cool, and serve with the dipping sauce.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • Freeze cooked chicken pieces individually before transferring them to a freezer-safe bag for up to 2 months.
  • Reheat in the oven at 375°F (190°C) for about 10-15 minutes.
