Instructions:
- Preheat your oven to 350°F (175°C). Grease your baking dish or line it with parchment paper for easy removal.
- In a large mixing bowl, combine the oat flour, rolled oats, cinnamon, and nutmeg. Stir well to ensure even distribution of spices.
- In another bowl, mash the bananas until smooth. Then, add the dates, apple juice, and vanilla extract. Mix until well combined.
- Pour the wet mixture into the dry ingredients. Stir until just combined, being careful not to overmix.
- Gently fold in the blueberries and walnuts, ensuring they are evenly distributed throughout the batter.
- Spread the batter evenly in the prepared baking dish. Bake for 25-30 minutes or until the edges are golden brown and a toothpick inserted in the center comes out clean.
- Allow the bars to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely. Once cool, slice into bars and enjoy!
