Ingredients
  

For the Bars:
  • 1 cup dates pitted and halved
  • 1 1/2 cups apple juice
  • 1 cup oat flour
  • 2 cups rolled oats
  • 3/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 3 bananas ripe and peeled
  • 1 teaspoon vanilla extract
  • 1/2 cup blueberries frozen works just fine
  • 1/2 cup walnuts chopped

Method
 

Instructions:
  1. Preheat your oven to 350°F (175°C). Grease your baking dish or line it with parchment paper for easy removal.
  2. In a large mixing bowl, combine the oat flour, rolled oats, cinnamon, and nutmeg. Stir well to ensure even distribution of spices.
  3. In another bowl, mash the bananas until smooth. Then, add the dates, apple juice, and vanilla extract. Mix until well combined.
  4. Pour the wet mixture into the dry ingredients. Stir until just combined, being careful not to overmix.
  5. Gently fold in the blueberries and walnuts, ensuring they are evenly distributed throughout the batter.
  6. Spread the batter evenly in the prepared baking dish. Bake for 25-30 minutes or until the edges are golden brown and a toothpick inserted in the center comes out clean.
  7. Allow the bars to cool in the pan for about 10 minutes before transferring them to a wire rack to cool completely. Once cool, slice into bars and enjoy!

Notes

  • These bars can be stored in an airtight container at room temperature for up to 3 days.
  • For longer storage, keep them in the fridge for up to a week.
  • Wrap individual bars in plastic wrap and freeze for up to 3 months.
