  • 2 Large Eggs
  • 1 teaspoon Vanilla extract

  • 1 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 1/4 cup Sour cream

  1. Step 1: Preheat your oven to 350°F (175°C) to ensure even baking.
  2. Step 2: Grease your loaf pan with canola oil or butter, or line with parchment paper.
  3. Step 3: In a large mixing bowl, cream together softened butter and granulated sugar until light and fluffy. Add smashed bananas, eggs, canola oil, sour cream, and vanilla extract, whisk until combined.
  4. Step 4: In another bowl, whisk together all-purpose flour, baking soda, and salt.
  5. Step 5: Gradually add dry ingredients to wet mixture. Use a spatula to fold until just combined—some lumps are fine!
  6. Step 6: Pour the batter into the prepared loaf pan and smooth the top.
  7. Step 7: Bake for 60-65 minutes, or until a toothpick comes out clean. If browning too quickly, tent with aluminum foil.
  8. Step 8: Let the banana bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
