Ingredients
  

For the Muffins:
  • 2 cups all-purpose flour (240 grams)
  • 1 teaspoon baking soda (6 grams)
  • 1 teaspoon baking powder (2 grams)
  • 1/2 teaspoon kosher salt
  • 1/2 cup unsalted butter (melted, 113 grams or 1 stick)
  • 6 ripe bananas (mashed, about 3 cups or 675 grams)
  • 1/2 cup brown sugar (107 grams)
  • 1/4 cup granulated sugar (50 grams)
  • 2 large eggs (100 grams), room temperature
  • 1 teaspoon pure vanilla extract (4 grams)
  • 1/3 cup Nutella (90 grams), store-bought or homemade

Method
 

Instructions
  1. Step 1: Preheat your oven to 350°F (175°C) to ensure even baking.
  2. Step 2: Line a muffin tin with paper liners or grease it lightly.
  3. Step 3: In a medium bowl, whisk together the flour, baking soda, baking powder, and salt. Set aside.
  4. Step 4: In a large bowl, combine melted butter, mashed bananas, brown sugar, and granulated sugar until well mixed.
  5. Step 5: Add eggs and vanilla to the banana mixture, stirring until fully incorporated.
  6. Step 6: Gradually add dry ingredients to the banana mixture, stirring gently until just combined.
  7. Step 7: Scoop the Nutella into the batter and gently fold it in, aiming for a marbled effect.
  8. Step 8: Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  9. Step 9: Bake for 18-20 minutes, or until a toothpick comes out clean.
  10. Step 10: Allow muffins to cool for 5 minutes before transferring to a wire rack.
