Ingredients
  

  • 2 pounds chicken breast cut into bite-sized pieces
  • 1 tablespoon sesame oil
  • 2 tablespoons cornstarch
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 2 teaspoons sriracha
  • ½ cup mayonnaise
  • ½ cup sweet chili sauce
  • 2 teaspoons lime juice
  • 1 teaspoon sriracha for extra spice

Method
 

  1. Preheat your oven to 400°F (200°C). In a large bowl, combine the chicken breast pieces with sesame oil, salt, pepper, garlic powder, and sriracha. Mix well to ensure each piece of chicken is evenly coated.
  2. Sprinkle the cornstarch over the seasoned chicken and toss until all the pieces are lightly coated.
  3. Line your baking sheet with parchment paper. Spread the chicken pieces out in a single layer.
  4. Bake the chicken bites for about 20-25 minutes, or until they are golden brown and cooked through.
  5. While the chicken is baking, prepare the sauce by whisking together the mayonnaise, sweet chili sauce, lime juice, and additional sriracha.
  6. Once the chicken is cooked, toss the warm chicken bites in the Bang Bang sauce until they are thoroughly coated.
  7. Transfer the sauced Bang Bang Chicken Bites to a serving platter and garnish with chopped green onions or sesame seeds if desired.

Notes

  • Store leftovers in an airtight container for up to 3 days.
  • Reheat in the oven at 350°F (175°C) for about 10 minutes to restore crispiness.
  • For longer storage, freeze the sauce separately from the chicken bites for up to 2 months.
