Ingredients
  

  • 2 cups all-purpose flour
  • 1/3 cup granulated sugar
  • 1 cup cold butter (2 sticks)
  • 2 cups cream cheese (softened)
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 2 cups mixed berries (strawberries, blueberries, raspberries)

Method
 

  1. In a large mixing bowl, combine the 2 cups of flour and 1/3 cup of granulated sugar. Cut in the 1 cup of cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Press this mixture into the bottom of your 9x13-inch baking dish to form an even layer.
  2. Preheat your oven to 350°F (175°C). Bake the crust for 15-20 minutes or until it is lightly golden. Remove from the oven and allow it to cool completely.
  3. In a mixing bowl, beat together the 2 cups of softened cream cheese, 1 cup of powdered sugar, and 1 teaspoon of vanilla extract until smooth and creamy.
  4. Once the crust has cooled, spread the cream cheese filling evenly over the crust. Smooth the top with a spatula.
  5. Arrange your mixed berries on top of the cheesecake layer to create a flag design, using blueberries for the star section and strawberries for the stripes.
  6. Refrigerate the assembled dessert for at least 4 hours before serving.
