Ingredients
  

  • 4 15 oz. cans black beans drained and rinsed
  • 1 tablespoon olive oil
  • 1/2 large yellow onion chopped (may sub 1 tsp onion powder)
  • 3 cloves garlic minced (may sub 1 tsp garlic powder)
  • 1 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 1 cup low sodium chicken broth (or water + 1 tsp chicken bouillon)
  • 2 tablespoons lime juice
  • 1-2 tablespoons minced cilantro (optional)

Method
 

  1. In a large pot or Dutch oven, heat the olive oil over medium heat. Once hot, add the chopped onion and sauté for about 5 minutes, or until it becomes translucent. Stir in the minced garlic and cook for another minute, until fragrant.
  2. Add the chili powder, ground cumin, salt, smoked paprika, and dried oregano to the pot. Stir well to coat the onions and garlic with the spices, allowing the flavors to bloom for about 1 minute.
  3. Drain and rinse the black beans under cold water. Add them to the pot along with the chicken broth (or water mixed with chicken bouillon). Stir to combine everything and bring the mixture to a gentle simmer.
  4. Let the beans simmer uncovered for about 15-20 minutes, stirring occasionally. This allows the flavors to meld and the liquid to reduce slightly. If you prefer a thicker consistency, continue simmering until you reach your desired thickness.
  5. Once the beans are cooked to your liking, remove the pot from heat. Stir in the lime juice and, if using, the minced cilantro for a fresh burst of flavor.
