Ingredients
  

  • 2 ¾ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¾ teaspoon salt
  • 1 cup unsalted butter softened
  • 1 cup granulated sugar
  • 1 cup light brown sugar packed
  • 1 cup extra-crunchy peanut butter
  • 2 large eggs
  • 1 tablespoon vanilla extract (or vanilla bean paste)
  • 1 cup dry roasted peanuts crushed

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Line your baking sheets with parchment paper.
  3. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
  4. In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
  5. Mix in the peanut butter until well combined, then add the eggs one at a time, followed by the vanilla extract.
  6. Gradually add the flour mixture to the wet ingredients, mixing just until combined.
  7. Gently fold in the crushed peanuts.
  8. Using a cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheets, leaving space for spreading.
  9. Bake for 10-12 minutes, or until the edges are lightly golden.
  10. Allow cookies to cool on the baking sheets for 5 minutes before transferring to a cooling rack.

Notes

  • For gluten-free, use a gluten-free flour blend.
  • To lower sugar, substitute with erythritol or stevia.
  • For vegan, use vegan butter and flax eggs.
