Ingredients
  

  • 12 large Eggs
  • 1 cup Cottage Cheese rinsed and drained
  • 1 cup Cheddar Cheese grated
  • 1 can Diced Green Chiles 4 oz.
  • 1 bunch Green Onions sliced, reserve some for garnish
  • 1 can Black Olives 6 oz., drained and sliced
  • 1 tbsp Spike Seasoning
  • to taste Salt
  • to taste Pepper

  • Large Mixing Bowl
  • Whisk
  • 9x13-inch Baking Dish
  • Measuring cups and spoons
  • Spatula

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease a 9x13-inch baking dish with cooking spray or butter.
  3. In a large mixing bowl, crack the 12 eggs and whisk them until well combined and slightly frothy.
  4. Add the cottage cheese, cheddar cheese, green chiles, green onions, black olives, Spike seasoning, and salt and pepper to the bowl. Mix gently until combined.
  5. Pour the mixture into the prepared baking dish and spread evenly.
  6. Bake for 45-55 minutes, or until the eggs are set and the top is lightly golden.
  7. Let the casserole cool for about 10 minutes, garnish with additional green onions if desired, and cut into squares to serve.

Notes

  • Store leftovers in the refrigerator for up to 5 days.
  • Reheat individual servings in the microwave for 1-2 minutes.
  • Feel free to experiment with different cheeses for added flavor.
