For the Breakfast Pigs in a Blanket:
  • 1 loaf soft white bread
  • 16 links maple breakfast sausage cooked according to package instructions
  • 3 large eggs scrambled
  • 1/2 cup milk
  • 1/2 tsp vanilla
  • 1/4 tsp cinnamon
  • 2 tbsp butter
  • maple syrup for serving, optional
  • powdered sugar for garnish, optional

Equipment

  • Large skillet
  • Spatula
  • Knife
  • Cutting board
  • Serving Platter

Method

Cooking Instructions
  1. Step 1: Prepare the Sausage - Cook the maple breakfast sausage links according to the package instructions. Once cooked, set them aside to cool slightly.
  2. Step 2: Make the Scrambled Eggs - In a bowl, whisk together the eggs, milk, vanilla, and cinnamon. Melt 1 tablespoon of butter in a large skillet over medium heat. Pour in the egg mixture and cook, stirring gently until the eggs are fluffy and fully cooked. Remove from heat.
  3. Step 3: Prepare the Bread - Take the soft white bread and cut each slice into quarters. You should have small squares that will be perfect for wrapping around your sausage links.
  4. Step 4: Assemble the Pigs in a Blanket - Place a cooked sausage link and a spoonful of scrambled eggs onto each piece of bread. Wrap the bread around the filling, pinching the ends to secure the sausage and eggs inside.
  5. Step 5: Cook the Wrapped Pigs - In the same skillet, melt the remaining tablespoon of butter over medium heat. Place the wrapped sausages seam-side down in the skillet and cook until golden brown on all sides.
  6. Step 6: Serve - Transfer the Breakfast Pigs in a Blanket to a serving platter. Drizzle with maple syrup and sprinkle with powdered sugar if desired. Enjoy warm!

Notes

  • Feel free to add vegetables such as spinach or bell peppers to the scrambled eggs for added nutrition.
  • These can be easily made ahead of time and reheated in the oven for a quick breakfast.
  • For a fun twist, try serving with different dipping sauces like ranch or hot sauce.
