Ingredients
  

  • 10 ounce goat cheese log very cold for easy slicing
  • 1/2 cup blue cheese crumbles optional
  • 2 whole eggs beaten
  • 2 cups panko breadcrumbs for perfect crunch
  • 1/2 cup butter melted (1 stick)
  • 1 cup Frank's Red Hot for buffalo flavor
  • 1 teaspoon seasoned salt to season breadcrumbs
  • Fresh greens to serve

Method
 

  1. Begin by slicing your cold goat cheese log into rounds, about 1/2 inch thick.
  2. In one bowl, pour in the beaten eggs. In another bowl, mix the panko breadcrumbs with the seasoned salt.
  3. Dip each slice of goat cheese into the beaten eggs, then transfer to the bowl with panko breadcrumbs, pressing gently to adhere.
  4. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  5. Place the breaded goat cheese slices on the baking sheet and drizzle the melted butter over them.
  6. Bake for 15-20 minutes or until golden brown and crispy. Watch closely to prevent burning.
  7. Remove from the oven and toss slices in a bowl with Frank's Red Hot sauce to coat evenly.
  8. Serve immediately on a platter over fresh greens with extra buffalo sauce on the side for dipping.
