Ingredients
  

  • 15 ounces chickpeas drained and rinsed
  • 1 medium potato peeled and cooked
  • 1/2 cup rolled oats
  • 1/4 cup yellow onion diced small
  • 1/4 cup carrots shredded
  • 1/2 cup buffalo hot sauce more or less depending on spice tolerance
  • 1 tablespoon fresh parsley chopped
  • 1/2 teaspoon ground black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried dill
  • 1 teaspoon kosher salt
  • 1 tablespoon dried parsley
  • 1 teaspoon onion powder
  • 1/2 teaspoon dried chives
  • 2 tablespoons mayonnaise
  • 1/4 cup plain Greek yogurt
  • 3 tablespoons buffalo sauce more or less depending on spice tolerance

Method
 

  1. In a mixing bowl, combine the drained and rinsed chickpeas with the cooked potato. Use a potato masher or fork to mash them together until you achieve a chunky consistency. You want some texture, so don’t over-mash.
  2. Add the rolled oats, diced onion, shredded carrots, and all the spices: garlic powder, dried dill, kosher salt, black pepper, dried parsley, onion powder, and chives. Stir until everything is well incorporated.
  3. Pour in the buffalo hot sauce, mayonnaise, and Greek yogurt. Mix thoroughly until the mixture is cohesive. If you prefer a spicier burger, feel free to add more buffalo sauce at this stage.
  4. Using your hands, form the mixture into burger patties. You should be able to make around 4-6 patties, depending on your preferred size.
  5. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and place the patties on it. Bake for about 25-30 minutes, flipping halfway through, until they’re golden and firm.
  6. Once baked, remove the patties from the oven and let them cool for a few minutes. Serve on your favorite burger buns with additional buffalo sauce, lettuce, tomato, or any of your favorite toppings.

Notes

  • Adjust the amount of buffalo sauce for your preferred spice level.
  • Use gluten-free oats to make this burger gluten-free.
  • Substitute Greek yogurt with a plant-based alternative for a vegan option.
  • These patties freeze well; bake them straight from the freezer.
