Ingredients
  

  • 2 medium carrots peeled and chopped
  • 1 cup fresh organic orange juice
  • 1 cup frozen red berries such as strawberries, raspberries, or blueberries
  • ½ cup organic Greek yogurt or a dairy-free alternative
  • 1 tablespoon honey optional
  • Fresh mint for garnish

Method
 

  1. Begin by peeling and chopping the 2 medium carrots into smaller pieces. This will help them blend more easily.
  2. In your high-speed blender, combine the chopped carrots, 1 cup of fresh organic orange juice, 1 cup of frozen red berries, and ½ cup of Greek yogurt. If you prefer a sweeter smoothie, you can add 1 tablespoon of honey at this stage.
  3. Blend on high speed for about 30-60 seconds, or until the mixture is completely smooth and creamy. If the smoothie is too thick, feel free to add a bit more orange juice to reach your desired consistency.
  4. Taste your smoothie and adjust the sweetness if needed. You can add more honey or even a splash of vanilla extract for an extra flavor boost.
  5. Pour the smoothie into glasses and garnish with fresh mint leaves. Enjoy immediately for the best flavor and freshness!

Notes

  • You can pre-chop carrots and store them in an airtight container in the fridge for up to three days.
  • For convenience, portion out your frozen berries and yogurt into individual bags and keep them in the freezer.
  • While the smoothie is best enjoyed fresh, you can store leftovers in the fridge for up to 24 hours; just shake before drinking.
