Ingredients

Ingredients
  • 16 ounces broccoli florets trimmed to similar sizes
  • 5 garlic cloves peeled and chopped
  • 2 tablespoons olive oil
  • 1.5 teaspoons salt
  • 0.5 teaspoon black pepper
  • 0.5 teaspoon onion powder
  • 0.25 teaspoon red pepper flakes optional
  • 1 lemon zest of
  • Grated Parmesan cheese for serving, optional

Equipment

  • Large baking sheet
  • Mixing bowl
  • Chef’s knife
  • Spatula
  • Oven mitts

Method

Instructions
  1. Step 1: Preheat Your Oven
Begin by preheating your oven to 425°F (220°C). This high temperature is key to achieving that desirable char.
  2. Step 2: Prepare the Broccoli
In a large mixing bowl, combine the broccoli florets with the chopped garlic. Drizzle the olive oil over the top and sprinkle with salt, black pepper, onion powder, and red pepper flakes (if using). Toss everything together until the broccoli is well-coated.
  3. Step 3: Spread on the Baking Sheet
Transfer the seasoned broccoli mixture onto the large baking sheet. Spread it out in a single layer to ensure even cooking. If the florets are too crowded, they may steam instead of char.
  4. Step 4: Roast in the Oven
Place the baking sheet in the preheated oven and roast for 20-25 minutes. Halfway through, use the spatula to toss the broccoli to ensure even charring. Look for a nice golden-brown color and crispy edges.
  5. Step 5: Add Lemon Zest
Once the broccoli is fully cooked, remove it from the oven and sprinkle the zest of one lemon over the top. This will add a fresh burst of flavor.
  6. Step 6: Serve with Parmesan
If desired, finish with a generous sprinkle of grated Parmesan cheese before serving. Enjoy your charred broccoli hot from the oven!
