Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups broccoli florets fresh or frozen
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup cream of chicken soup canned or homemade
  • 1/2 cup milk whole or your preferred type
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • salt and pepper to taste
  • 1/4 cup cooked and crumbled turkey bacon ensure fully cooked
  • 1 cup breadcrumbs preferably plain or seasoned

Equipment

  • Oven
  • Baking dish (around 9x13 inches)
  • Mixing bowl
  • Knife
  • Cutting board
  • Skillet
  • Measuring cups and spoons

Method

Preparation
  1. Set your oven to 375°F (190°C) to preheat. Rinse the chicken breasts and pat them dry. Cut the broccoli into bite-sized florets if needed. Cook and crumble the turkey bacon in a skillet until crispy, then set aside.
Make the Sauce
  1. In a medium mixing bowl, combine the cream of chicken soup with the milk. Stir in garlic powder, onion powder, salt, and pepper. Add half of the shredded cheddar and mozzarella cheese to the mixture and stir until evenly incorporated.
Assemble the Bake
  1. In your baking dish, arrange the chicken breasts in a single layer. Distribute the broccoli florets evenly over and around the chicken. Pour the creamy cheese sauce over the chicken and broccoli, making sure everything is well coated.
  2. Sprinkle the remaining cheddar and mozzarella cheese evenly over the top. Next, add the breadcrumbs, spreading them out to cover the cheese layer. Finally, sprinkle the cooked turkey bacon crumbles across the top for a savory crunch.
Bake
  1. Place the baking dish in the preheated oven and bake uncovered for about 30-35 minutes. The chicken should be cooked through (internal temperature of 165°F or 74°C), and the top should be golden brown and bubbly. If the breadcrumbs brown too quickly, loosely cover the dish with foil halfway through baking.
Serve
  1. Remove from the oven and allow the Cheesy Smothered Chicken and Broccoli Bake to rest for 5 minutes before serving. This resting time lets the flavors meld and makes it easier to serve portions.

Notes

  • Use chicken thighs instead of breasts for a juicier, more flavorful bake.
  • Swap turkey bacon for beef bacon or omit it for a vegetarian-friendly version using vegetable broth-based soup.
  • Try different cheeses like Monterey Jack, pepper jack, or gouda for a unique twist.
  • Add smoked paprika or chili flakes to the sauce for a subtle smoky or spicy kick.
  • Store leftovers in an airtight container for up to 3 days or freeze for up to 2 months.
