Ingredients
  

  • 1 tablespoon olive oil for sautéing the chicken
  • 3 pieces boneless and skinless chicken breasts cubed
  • 1/2 cup cherry tomatoes halved
  • 1 piece avocado pitted and sliced
  • 1/2 cup Caesar dressing classic dressing
  • 4 leaves romaine lettuce for cups
  • 1/4 cup Parmesan cheese grated

Method
 

  1. Start by heating the olive oil in a skillet over medium heat. Once the oil is hot, add the cubed chicken breasts and season with salt and pepper. Cook the chicken until it's golden brown and cooked thoroughly, about 7-10 minutes. Make sure to stir occasionally for even cooking.
  2. While the chicken is cooking, prepare the remaining ingredients. Halve the cherry tomatoes, slice the avocado, and grate the Parmesan cheese. Once the chicken is done, remove it from heat and let it cool slightly.
  3. In a large bowl, combine the cooked chicken with the Caesar dressing. Toss well so that each piece of chicken is coated with the dressing.
  4. Take the romaine leaves and lay them flat on a serving platter. Spoon the chicken mixture generously onto each leaf. Top with halved cherry tomatoes, sliced avocado, and a sprinkle of grated Parmesan cheese.
  5. These Chicken Caesar Lettuce Cups are best served immediately while the chicken is warm and the lettuce is crisp. Enjoy them as a light meal on their own or as an appetizer at your next gathering!
