Ingredients
  

  • 1 tablespoon olive oil
  • 1 package Flatout Flatbread (Multi-grain with Flax)
  • 1.5 cups cooked rice
  • 1 15 oz. can black beans rinsed and drained
  • 1.5 cups sharp cheddar cheese
  • to taste sour cream
  • 1 medium avocado
  • 0.5 cup sour cream
  • 2 tablespoons mayonnaise
  • 3 tablespoons milk
  • 1-2 tablespoons lime juice
  • 0.5 teaspoon salt
  • 0.25 teaspoon garlic powder

Method
 

  1. Begin by preheating your oven to 400°F (if using the sheet pan method). In a large bowl, combine sliced chicken breast, bell peppers, and onions. Drizzle with olive oil, and season with salt, garlic powder, and any other spices of your choice. Toss until everything is well-coated.
Cooking Options
  1. Sheet Pan Method: Spread the chicken and veggie mixture onto a sheet pan in a single layer. Roast in the oven for about 20-25 minutes, or until the chicken is cooked through and the veggies are tender.
  2. Skillet Method: Heat a skillet over medium-high heat. Add the seasoned chicken and veggies, and sauté for about 10-15 minutes, stirring occasionally, until the chicken is cooked through and the veggies are slightly charred.
  3. Slow Cooker Method: Place the seasoned chicken and veggies in the slow cooker. Cook on low for 6-8 hours or high for 3-4 hours, until the chicken is tender and easily shredded.
  4. While your chicken is cooking, prepare the creamy avocado dip. In a mixing bowl, mash the avocado until smooth. Stir in sour cream, mayonnaise, milk, lime juice, salt, and garlic powder. Adjust the lime juice and salt according to your taste preference. Set aside.
  5. Once your chicken and veggies are cooked, it’s time to assemble your wraps. Lay a piece of Flatout Flatbread on a plate, and layer with cooked rice, black beans, sautéed chicken and veggies, a sprinkle of sharp cheddar cheese, and a dollop of sour cream. Drizzle with the creamy avocado dip, and then fold the wrap tightly.
  6. Cut the wraps in half for easy handling, and serve them warm with extra creamy avocado dip on the side. These wraps are perfect for dinner, packed for lunch, or even as a fun appetizer at your next gathering.

  • Feel free to experiment with different vegetables such as zucchini or corn to enhance the flavor and texture of your wraps.
