  • 1 tablespoon olive oil
  • 12 oz boneless skinless chicken breasts cut into bite-sized pieces
  • 1/2 cup basil pesto homemade or store-bought
  • 1 1/2 cups halved grape tomatoes
  • 1/4 cup chopped basil fresh
  • Kosher salt and black pepper to taste

Instructions
  1. Begin by boiling a pot of salted water. Once the water is boiling, add the cheese tortellini and cook according to the package instructions until they are al dente. Drain and set aside.
  2. In a large skillet over medium heat, add olive oil. Once the oil is hot, add the cut chicken breasts, seasoning with kosher salt and black pepper. Cook for about 5-7 minutes, stirring occasionally, until the chicken is cooked through and golden brown.
  3. Once the chicken is cooked, add the halved grape tomatoes to the skillet. Stir well and cook for an additional 2-3 minutes, allowing the tomatoes to soften slightly.
  4. Reduce the heat to low and stir in the basil pesto until the chicken and tomatoes are well coated.
  5. Add the cooked tortellini to the skillet, gently tossing everything together until the tortellini is warmed through and coated with the pesto mixture.
  6. Remove the skillet from heat, and sprinkle the chopped basil over the top. For an extra touch, garnish with fresh basil and grated Parmesan cheese if desired. Serve immediately and enjoy!
