  • 2 cans chickpeas 15 ounce, drained and rinsed
  • 1 tablespoon olive oil
  • 2 tablespoons homemade taco seasoning
  • 4-5 small flour tortillas
  • 1 each avocado
  • 1 each tomato
  • 1 each red onion
  • 1 each jalapeno
  • 1 bunch cilantro
  • 1 cup cotija cheese crumbled
  • 1 each Creamy Cilantro Ranch for drizzling

Method
 

Cooking Instructions:
  1. Start by draining and rinsing the chickpeas under cold water. This helps remove excess sodium and improves the taste.
  2. In a skillet, heat the olive oil over medium heat. Add the rinsed chickpeas and cook for about 3-5 minutes, stirring occasionally.
  3. Sprinkle the homemade taco seasoning over the chickpeas and mix well. Allow the chickpeas to cook for an additional 5-7 minutes until they are heated through and slightly crispy.
  4. While the chickpeas are cooking, warm the flour tortillas in a separate pan or microwave. This makes them soft and pliable for filling.
  5. Chop the avocado, tomato, red onion, jalapeno, and cilantro. Set them aside in separate bowls for easy assembly.
  6. Take a warm tortilla and fill it with a generous scoop of the seasoned chickpeas. Top with avocado, tomato, red onion, jalapeno, and a sprinkle of cotija cheese. Drizzle with the creamy cilantro ranch for that extra zing.
