Ingredients
  

For the Salad:
  • 5 oz. pre-washed lettuce
  • 1/4 head red cabbage shredded
  • 1/2 lb. cooked chicken shredded
  • 1 each red pepper diced
  • 4 each scallions sliced
  • 1 can mandarin oranges drained
  • 1/2 cup chow mein noodles
For the Dressing:
  • 2 teaspoons minced garlic
  • 2 teaspoons grated ginger
  • 2 1/2 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 2 tablespoons soy sauce
  • 2 tablespoons white vinegar
  • 3 tablespoons canola oil

Method
 

How to Prepare:
  1. Step 1: Prepare the Chicken - Cook your chicken by boiling, baking, or grilling until fully cooked. Shred into bite-sized pieces and set aside.
  2. Step 2: Chop the Veggies - In a large mixing bowl, add the pre-washed lettuce, shredded red cabbage, diced red pepper, sliced scallions, and drained mandarin oranges.
  3. Step 3: Make the Dressing - In a separate bowl, whisk together the minced garlic, grated ginger, brown sugar, sesame oil, soy sauce, white vinegar, and canola oil until well combined.
  4. Step 4: Combine Ingredients - Add the shredded chicken to the bowl of veggies, pour the dressing over, and toss gently to combine.
  5. Step 5: Add Crunch - Sprinkle the chow mein noodles on top just before serving, keeping some for presentation.
