Method
 

  1. Preheat your oven to 350°F (175°C). Grease your loaf pan or line it with parchment paper for easy removal.
  2. Wash the zucchini thoroughly and then shred it using a grater. You can leave the skin on for some added color and nutrients. Set aside.
  3. In a large mixing bowl, whisk together the vegetable oil, packed brown sugar, granulated sugar, eggs, and vanilla extract until smooth and well combined.
  4. In another bowl, mix together the flour, cinnamon, baking soda, baking powder, and salt. Make sure there are no clumps.
  5. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to over-mix.
  6. Gently fold in the shredded zucchini and chocolate chips using a rubber spatula, ensuring everything is evenly distributed.
  7. Transfer the batter into the prepared loaf pan. Sprinkle a few extra chocolate chips on top for a beautiful finish.
  8. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean. If the top is browning too quickly, tent it with foil.
