Ingredients
  

For the Biscotti:
  • 1-2/3 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder good quality (recommended: Trader Joe's)
  • 1-1/2 tsp baking powder
  • Pinch salt
  • 3/4 cup superfine sugar can be made by processing regular sugar
  • 3/4 cup dark chocolate chips high-quality recommended
  • 2 large eggs
  • 1 large egg white

Method
 

Instructions:
  1. Step 1: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Step 2: In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt. Set aside.
  3. Step 3: In a large bowl, combine the sugar, eggs, and egg white. Whisk until smooth.
  4. Step 4: Gradually add the dry ingredients to the wet ingredients and stir until just combined.
  5. Step 5: Fold in the dark chocolate chips.
  6. Step 6: Transfer the dough onto the baking sheet, shaping it into a log about 12 inches long and 3 inches wide.
  7. Step 7: Bake for 25-30 minutes or until firm. Let cool for 10 minutes.
  8. Step 8: Slice the log diagonally into 1/2-inch thick pieces.
  9. Step 9: Arrange slices cut side down and bake for another 15-20 minutes, flipping halfway through.
  10. Step 10: Allow to cool completely before serving or storing.

Notes

  • Store in an airtight container at room temperature for up to two weeks.
  • Freeze for longer storage in a freezer-safe bag.
  • Reheat in the oven for a few minutes to regain crunch.
