  • 1 teaspoon Baking soda
  • 0.5 teaspoon Kosher salt
  • 1 cup Real maple syrup
  • 1 cup Coffee or café americano
  • 1 tablespoon White vinegar
  • 2 teaspoons Vanilla extract
  • 0.25 cups Olive oil plus 2 tablespoons
For the Peanut Butter Frosting:
  • 0.67 cups Natural peanut butter
  • 0.25 cups Maple syrup
  • 1 tablespoon Milk

Method
 

Instructions:
  1. Step 1: Preheat your oven to 350°F (175°C). Line a muffin tin with cupcake liners.
  2. Step 2: In a large mixing bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  3. Step 3: In a separate bowl, combine the maple syrup, coffee, vinegar, vanilla extract, and olive oil. Whisk until smooth.
  4. Step 4: Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Step 5: Distribute the batter into the cupcake liners, filling each about two-thirds full. Bake for 18-20 minutes.
  6. Step 6: Prepare the frosting by mixing peanut butter, maple syrup, and milk until smooth.
  7. Step 7: Frost the cooled cupcakes generously with the peanut butter frosting.
