Once the cream is heated, remove it from the heat and add 10 ounces of semi-sweet chocolate chips to the bowl. Let it sit for about 2-3 minutes without stirring. This allows the chocolate to soften.
Using a whisk or spatula, gently stir the mixture until the chocolate is completely melted and the ganache is smooth and glossy. If there are still unmelted bits, you can return it to the heat for a few seconds.
Let the ganache cool slightly before using it as a glaze or frosting. If you want to use it as a filling, allow it to cool to room temperature and then refrigerate it until it thickens to your desired consistency.
