  • 1 cup light corn syrup
  • 1 cup semi-sweet chocolate chips
  • 1 cup creamy peanut butter
  • 3 cups quick oats
  • 1 cup coconut
  • 1.5 cups Heath toffee bits

Method
 

  1. Prepare your workspace by ensuring your kitchen is clean and all ingredients and tools are ready. Line your baking sheet with parchment paper.
  2. In a medium saucepan over medium heat, combine sugar, corn syrup, and peanut butter. Stir constantly until it comes to a gentle boil, then remove from heat.
  3. Add chocolate chips to the hot mixture and stir until fully melted and smooth.
  4. In a large mixing bowl, combine oats, coconut, and toffee bits. Mix well.
  5. Pour the melted chocolate mixture over the dry ingredients and stir until well combined.
  6. Drop spoonfuls of the mixture onto the prepared baking sheet and flatten slightly if desired.
  7. Let the cookies cool at room temperature for about 30 minutes or refrigerate for quicker setting.
