Chunky Monkey Overnight Oats (Vegan!)

Ingredients
  

  • 1/2 banana ripe banana mashed
  • 1/2 cup old-fashioned rolled oats gluten-free if desired
  • 1/2 cup dairy-free milk almond, soy, or coconut milk
  • 2 tsp chia seeds
  • 2 tsp cacao powder or cocoa powder as substitute
  • 1-2 Tbsp pure maple syrup
  • 2 Tbsp creamy, natural peanut butter
  • 1/2 tsp vanilla extract
  • 1/8 tsp almond extract
  • Ground cinnamon optional

Method
 

  1. In a mixing bowl, mash the ripe banana with a fork until smooth.
  2. Add the rolled oats, dairy-free milk, chia seeds, cacao powder, maple syrup, peanut butter, vanilla extract, almond extract, and a sprinkle of cinnamon into the bowl with the mashed banana. Stir until everything is well combined.
  3. Transfer the mixture into an airtight jar or container. Make sure to leave some space at the top, as the oats will expand as they absorb the liquid.
  4. Seal the jar tightly and refrigerate overnight.
  5. In the morning, give your oats a good stir. You can add a splash more of dairy-free milk if you prefer a thinner consistency. Top with extra banana slices, a drizzle of peanut butter, or even a handful of nuts for added crunch. Enjoy your nutritious breakfast!

Notes

  • Store in the refrigerator for up to 5 days in an airtight container.
  • You can freeze the mixture for up to a month.
  • If reheating, microwave for 30 seconds to a minute, adding a splash of dairy-free milk if needed.
