  • 2 tablespoons coconut oil or extra virgin olive oil for a rich base flavor
  • 1 cup long-grain rice (jasmine or basmati) rinsed and well drained
  • 1 clove garlic minced
  • 1 ¾ cups filtered water
  • ¾ teaspoon fine sea salt to enhance the flavors
  • 1 lime zest of
  • 1 tablespoon lime juice plus more to taste
  • ½ bunch cilantro finely chopped (about ½ cup loosely packed)

Method
 

Step-by-Step Instructions
  1. Start by rinsing the rice under cold water until the water runs clear. This step is crucial as it removes excess starch, resulting in fluffy rice. Drain the rice well.
  2. In a medium saucepan, heat the coconut oil or extra virgin olive oil over medium heat. Add the minced garlic and sauté for about 1 minute, just until fragrant. Be careful not to burn the garlic.
  3. Add the drained rice to the saucepan, stirring to coat it with the oil and garlic. Toast the rice for about 2-3 minutes, allowing it to absorb the flavors. Then, pour in the filtered water and add the fine sea salt.
  4. Increase the heat to high and bring the water to a boil. Once boiling, reduce the heat to low, cover the saucepan, and let it simmer for 15-20 minutes, or until the rice is tender and all the liquid has been absorbed.
  5. Once the rice is cooked, remove it from heat and let it sit covered for an additional 5 minutes. Then, uncover and fluff the rice with a fork. Stir in the lime zest, lime juice, and chopped cilantro. Taste and adjust with additional lime juice if desired.

Notes

  • Store leftover rice in an airtight container in the refrigerator for up to 4 days.
  • For longer storage, freeze the rice in a freezer-safe container for up to 3 months.
  • Reheat rice in the microwave with a splash of water to prevent it from drying out.
