Ingredients

  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 2 teaspoons fresh thyme leaves
  • 1 teaspoon white pepper
  • 1 clove garlic minced
  • 1 tablespoon olive oil
  • 1 lb chicken tenders or chicken breasts cut into bite-sized pieces
  • 12 wooden skewers soaked in water to prevent burning
  • Fresh thyme or parsley for garnish

Equipment

  • Mixing bowl
  • Wooden or metal skewers
  • Grill or grill pan
  • Meat thermometer
  • Serving Platter

Method

  1. In a mixing bowl, combine the sugar, salt, ground cinnamon, fresh thyme leaves, white pepper, minced garlic, and olive oil. Whisk these ingredients together until well blended.
  2. Add the chicken pieces to the bowl and toss until they are evenly coated in the marinade. Cover the bowl and let the chicken marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
  3. Once the chicken has marinated, thread the chicken pieces onto the soaked wooden skewers, leaving a little space between each piece.
  4. Preheat your grill or grill pan over medium-high heat. Oil the grates to prevent sticking.
  5. Place the skewers on the grill and cook for about 10-12 minutes, turning occasionally until the chicken is cooked through and has nice grill marks.
  6. Once the skewers are done, remove them from the grill and let them rest for a couple of minutes. Serve them warm, garnished with fresh thyme or parsley.

Notes

  • For a healthier option, use skinless chicken breasts.
  • Swap sugar for honey or maple syrup for natural sweetness.
  • Store leftovers in an airtight container for up to 3 days.
