Ingredients
  

For the Wings:
  • 2 lbs chicken wings (drumettes and wing flats)
  • 1 teaspoon Kosher salt
  • 1 teaspoon black pepper (divided)
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon cayenne pepper
  • ½ cup unsalted butter
  • ½ cup hot sauce (i.e., Franks)
  • ½ teaspoon garlic powder
  • ½ teaspoon Kosher salt
  • ½ teaspoon black pepper
  • to taste Blue cheese dressing for dipping
  • to taste Celery cut into strips

Method
 

Cooking Instructions:
  1. 1. Prepare the Wings: Start by patting the chicken wings dry with paper towels. This helps to achieve that crispy skin once fried.
  2. 2. Season the Wings: In a large bowl, combine the Kosher salt, black pepper, garlic powder, smoked paprika, and cayenne pepper. Toss the wings in this spice mix until they are well coated.
  3. 3. Heat the Oil: In a large pot or deep fryer, pour in enough vegetable oil to cover the wings completely (at least 3 inches). Heat the oil to 375°F (190°C).
  4. 4. Fry the Wings: Carefully add the seasoned wings to the hot oil in batches to avoid overcrowding. Fry for about 8-10 minutes or until golden brown and crispy. Use a slotted spoon or tongs to remove the wings from the oil and place them on a plate lined with paper towels to drain excess oil.
  5. 5. Make the Sauce: While the wings are frying, melt the unsalted butter in a saucepan over medium heat. Once melted, stir in the hot sauce, garlic powder, Kosher salt, and black pepper until well combined.
  6. 6. Toss the Wings: In a large bowl, pour the hot sauce mixture over the fried wings. Toss until the wings are evenly coated in the sauce.
  7. 7. Serve and Enjoy: Arrange the wings on a serving platter and serve with a side of blue cheese dressing and celery sticks for dipping.
