Ingredients
  

  • 31 oz chickpeas (from 15.5 oz cans), rinsed and drained
  • 1 clove garlic (chopped)
  • 2 tablespoons tahini
  • 3 tablespoons lemon juice (freshly squeezed)
  • 3/4 teaspoon cumin
  • 1/4 cup olive oil
  • 1/2 cup cold water (or more for desired consistency)

Method
 

  1. Begin by rinsing and draining the chickpeas thoroughly. This removes excess sodium and any canning liquid that can affect the flavor and texture of your hummus.
  2. In your food processor or blender, combine the rinsed chickpeas, garlic, tahini, lemon juice, salt, black pepper, and cumin. Blend these ingredients until they are well mixed.
  3. While the blender is running, slowly drizzle in the olive oil. After that, gradually add cold water. Keep blending until the mixture is smooth. You can add more water to achieve your desired consistency.
  4. Once blended, taste your hummus. Adjust the seasoning with more salt, lemon juice, or spices as needed. Remember, the flavor will develop further as it chills.
  5. Transfer your classic hummus to a serving bowl. Drizzle a little extra olive oil on top for added flavor and garnish with a sprinkle of paprika or fresh herbs if desired. Serve with pita bread, veggies, or use it as a spread in sandwiches.

Notes

  • Store in an airtight container to keep it fresh.
  • Homemade hummus can last up to a week in the refrigerator.
  • Freeze leftovers for up to three months, leaving space for expansion.
