  • 90 g Brown Sugar Adds moisture and flavor; can be replaced with your favorite sweetener.
  • 2 Eggs Room temperature for better mixing.
  • 1 tsp Vanilla Extract Use pure vanilla for best flavor.
  • 2-3 Limes For zest and juice if desired.
  • 200 g All-Purpose Flour The base for your cookie dough.
  • 50 g Coconut Flakes Use unsweetened for a more natural sweetness.
  • 1 pinch Salt Enhances all flavors.

Method
 

  1. Step 1: Preheat your oven to 180°C (350°F) to ensure even baking.
  2. Step 2: In a mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
  3. Step 3: Add the eggs one at a time, mixing well after each. Then add the vanilla extract and mix until fully incorporated.
  4. Step 4: Grate the rind of 2 or 3 limes and fold it into your mixture.
  5. Step 5: In a separate bowl, whisk together the all-purpose flour, coconut flakes, and salt. Gradually add to the wet mixture, mixing just until combined.
  6. Step 6: Using a cookie scoop, drop rounded tablespoons of dough onto a baking sheet lined with parchment paper, leaving space between each cookie.
  7. Step 7: Bake for 10-12 minutes or until edges are lightly golden. The centers may look slightly underbaked.
  8. Step 8: Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For extra flavor, add a teaspoon of lime juice to the dough.
  • Add chocolate chips or nuts for additional texture.
