Ingredients
  

For the Waffles:
  • 1 3/4 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda

  • 2 large eggs (yolks and whites separated)
  • 2 cups canned unsweetened coconut milk (see note below)
  • 2 teaspoons lemon juice
  • 1/2 cup vegetable or canola oil
  • 1 cup canned unsweetened coconut milk (see note below)
  • 1/2 teaspoon vanilla extract
  • 1/4 cup light brown sugar
  • 1/4 cup granulated sugar
  • 1 cup fresh pineapple, chopped
  • 3 tablespoons shredded sweetened coconut
For the Pineapple Coconut Syrup:
  • 1 cup chopped fresh pineapple
  • 1 cup canned unsweetened coconut milk
  • 3 tablespoons shredded sweetened coconut

Cooking Instructions
  1. Step 1: Preheat and Prep - Start by preheating your waffle iron according to the manufacturer's instructions.
  2. Step 2: Combine Dry Ingredients - In a large mixing bowl, whisk together 1 3/4 cups of all-purpose flour, 2 teaspoons of baking powder, 1/2 teaspoon of baking soda, and 1/2 teaspoon of salt.
  3. Step 3: Mix Wet Ingredients - In another bowl, beat the 2 egg yolks and then add 2 cups of canned unsweetened coconut milk, 2 teaspoons of lemon juice, 1/2 cup of oil, 1/2 teaspoon of vanilla extract, 1/4 cup of light brown sugar, and 1/4 cup of granulated sugar. Mix until well combined.
  4. Step 4: Combine Wet and Dry Mixtures - Pour the wet mixture into the bowl with the dry ingredients and gently fold until just combined.
  5. Step 5: Beat Egg Whites - In a clean bowl, beat the 2 egg whites until stiff peaks form. Gently fold them into the batter.
  6. Step 6: Cook the Waffles - Lightly grease your preheated waffle iron and pour an appropriate amount of batter. Cook for about 3-5 minutes or until golden brown.
  7. Step 7: Prepare Pineapple Coconut Syrup - In a small saucepan, combine 1 cup of chopped fresh pineapple, 1 cup of canned unsweetened coconut milk, and 3 tablespoons of shredded sweetened coconut. Heat until slightly thickened.
