Ingredients
  

For the Pudding:
  • 4 tablespoons chia seeds (heaped)
  • 1 cup strong coffee (freshly brewed and cooled, 175ml)
  • 1 cup coconut milk (full fat, out of a can, 175ml)
  • 2 tablespoons powdered sweetener (or honey or maple syrup)
  • 1 teaspoon vanilla extract (optional)
  • 1 teaspoon cinnamon (optional)
  • 1 tablespoon almond butter (16g, optional)

Method
 

Instructions:
  1. In a mixing bowl, combine the chia seeds, strong coffee, coconut milk, powdered sweetener, and vanilla extract if using. Stir well to ensure that the chia seeds are evenly distributed.
  2. If you’re feeling adventurous, sprinkle in the cinnamon and stir again. This will add a warm flavor that complements the coffee beautifully.
  3. Cover the bowl with plastic wrap or a lid and place it in the refrigerator. Let it sit for at least 2 hours, or preferably overnight. This allows the chia seeds to absorb the liquid and swell, creating a pudding-like consistency.
  4. Once the pudding has thickened, give it a good stir to break up any clumps. If desired, serve it with a spoonful of almond butter on top for an extra creamy finish. You can also add toppings like fresh fruit, nuts, or granola for added texture.

Notes

  • Store your Coffee Chia Pudding in an airtight container in the fridge for up to 5 days.
  • If it thickens too much, stir in a little more coconut milk or coffee to loosen it up.
