Instructions:
- In a mixing bowl, combine the chia seeds, strong coffee, coconut milk, powdered sweetener, and vanilla extract if using. Stir well to ensure that the chia seeds are evenly distributed.
- If you’re feeling adventurous, sprinkle in the cinnamon and stir again. This will add a warm flavor that complements the coffee beautifully.
- Cover the bowl with plastic wrap or a lid and place it in the refrigerator. Let it sit for at least 2 hours, or preferably overnight. This allows the chia seeds to absorb the liquid and swell, creating a pudding-like consistency.
- Once the pudding has thickened, give it a good stir to break up any clumps. If desired, serve it with a spoonful of almond butter on top for an extra creamy finish. You can also add toppings like fresh fruit, nuts, or granola for added texture.
Notes
- Store your Coffee Chia Pudding in an airtight container in the fridge for up to 5 days.
- If it thickens too much, stir in a little more coconut milk or coffee to loosen it up.
- Feel free to customize with different spices, extracts, or nut butters for varied flavors!
