Ingredients
  

  • 1 pound lean ground beef
  • 1/2 cup chicken gizzards finely chopped
  • 1/2 cup green bell pepper finely diced
  • 1/3 cup green onions sliced
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon celery flakes
  • 1 teaspoon Tony Chacheres Creole Seasoning
  • 1/4 teaspoon red pepper flakes
  • 4 cups long grain rice cooked and drained
  • 1/4 to 1/3 cup water
  • 1/4 teaspoon ground black pepper

Method
 

  1. In a large skillet over medium-high heat, add the lean ground beef. Cook until browned, breaking it apart with a wooden spoon. This should take about 5-7 minutes.
  2. Once the beef is browned, add the finely chopped chicken gizzards, green bell pepper, and sliced green onions. Sauté for another 5 minutes until the vegetables are softened.
  3. Sprinkle in the garlic powder, celery flakes, Tony Chacheres Creole Seasoning, red pepper flakes, and ground black pepper. Stir well to combine, allowing the spices to coat the meat and vegetables.
  4. Add the cooked and drained long grain rice to the skillet. Mix thoroughly so that the rice is evenly distributed with the meat and vegetables.
  5. If the mixture feels dry, add a little water, starting with 1/4 cup and adding more if necessary. Stir everything together and let it cook for an additional 3-5 minutes, allowing flavors to meld.
  6. Once heated through, your Copycat Popeyes Cajun Rice is ready to be served! Garnish with extra green onions if desired and enjoy it as a side dish or a main course.

Notes

  • Store leftovers in an airtight container in the fridge for up to 3 days.
  • To reheat, simply microwave in short bursts until heated through.
