- In a mixing bowl, combine the mayonnaise, granulated sugar, and lemon juice. Stir until smooth and well combined.
- Lay out four slices of bread. Spread mayonnaise dressing on each slice, layer corned beef, Swiss cheese, and shredded cabbage.
- Top with another slice of bread. Heat skillet over medium heat, add butter or cooking spray, and cook sandwiches for 3-4 minutes on each side until golden and cheese is melted.
- Remove from skillet, let cool slightly, slice in half, and drizzle with additional thousand island dressing if desired. Serve with pickles.
Notes
- Let corned beef come to room temperature before assembling for best flavor.
- Experiment with different mustard types for an added kick.
- Don’t overfill to prevent falling apart while flipping.
