Ingredients
  

For the Sandwich:
  • 8 slices marbled rye or pumpernickel bread
  • 1 pound cooked and sliced corned beef
  • 4-8 slices Swiss cheese
  • 2 cups thinly shredded cabbage
  • ½ cup mayonnaise
  • 1 tablespoon granulated sugar
  • 1 tablespoon lemon juice
  • to taste Pickles for serving
  • to taste Thousand island dressing for drizzling

Method
 

Instructions
  1. In a mixing bowl, combine the mayonnaise, granulated sugar, and lemon juice. Stir until smooth and well combined.
  2. Lay out four slices of bread. Spread mayonnaise dressing on each slice, layer corned beef, Swiss cheese, and shredded cabbage.
  3. Top with another slice of bread. Heat skillet over medium heat, add butter or cooking spray, and cook sandwiches for 3-4 minutes on each side until golden and cheese is melted.
  4. Remove from skillet, let cool slightly, slice in half, and drizzle with additional thousand island dressing if desired. Serve with pickles.

Notes

  • Let corned beef come to room temperature before assembling for best flavor.
  • Experiment with different mustard types for an added kick.
  • Don’t overfill to prevent falling apart while flipping.
