Ingredients

  • 8 ounces fettuccine pasta
  • 1 pound steak ribeye or sirloin, cut into strips
  • 1 tablespoon Cajun seasoning
  • 2 tablespoons olive oil divided
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic minced
  • salt and pepper to taste
  • fresh parsley chopped for garnish

Equipment

  • Large pot
  • Large skillet
  • Cast iron pan
  • Wooden spoon
  • Silicone spatula
  • Knife
  • Cutting board
  • Grater
  • Colander

Method

Build Creamy Cajun Steak Alfredo with Charred Peppers Step by Step
  1. Bring a large pot of salted water to a boil. Add the fettuccine and cook according to package instructions until al dente, about 8 to 10 minutes. Reserve a cup of pasta water before draining.
  2. Toss the steak strips with Cajun seasoning, salt, and pepper. Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Sear the steak for 2-3 minutes on each side until browned but juicy. Remove and set aside.
  3. Add remaining 1 tablespoon olive oil to the skillet. Add sliced red and yellow bell peppers and cook over medium-high heat. Let peppers char undisturbed for a couple minutes, then stir occasionally until softened and slightly blackened, about 6-8 minutes. Add minced garlic in the last minute.
  4. Lower heat to medium. Pour heavy cream into the skillet with peppers and garlic. Bring to a gentle simmer, stirring constantly. Gradually whisk in grated Parmesan until melted and smooth. Season with salt and pepper to taste.
  5. Return seared steak strips to the skillet and stir to coat in sauce. Add drained fettuccine and toss everything together. Add reserved pasta water if sauce is too thick.
  6. Sprinkle freshly chopped parsley over the top. Serve immediately while warm.

Notes

  • Reserve pasta water to adjust sauce consistency perfectly.
  • Use fresh Parmesan cheese for a smooth, rich Alfredo sauce.
  • Don’t overcook the steak to keep it juicy and tender.
  • Try swapping steak with chicken or shrimp for a different protein option.
  • Add vegetables like mushrooms or spinach for extra nutrition and texture.
