From Start to Finish: Crispy Chicken Wraps
- In a mixing bowl, combine the shredded chicken, taco seasoning, and mild enchilada sauce. Mix until the chicken is evenly coated.
- Fold in the freshly shredded sharp Cheddar cheese into the chicken mixture.
- Take a large flour tortilla and spread a generous layer of refried beans in the center. Spoon a heaping portion of the chicken and cheese mixture on top of the beans. Carefully fold in the sides and roll the tortilla tightly to encase the filling.
- Heat a large skillet over medium heat and spray it lightly with cooking spray. Place the wraps seam-side down in the skillet. Cook for about 3-4 minutes on each side or until golden brown and crispy.
- Slice the wraps in half for easy eating and serve with your favorite toppings such as sour cream, guacamole, or salsa.
