  • 2 cups cooked chicken (shredded or diced)
  • 1 packet taco seasoning (about 2 tablespoons)
  • 3/4 cup mild enchilada sauce
  • 2 cups freshly shredded sharp Cheddar cheese
  • 6 large flour tortillas (burrito-sized)
  • 1 can refried beans (16-ounce)
  • Cooking spray
  • Optional toppings

Method
 

From Start to Finish: Crispy Chicken Wraps
  1. In a mixing bowl, combine the shredded chicken, taco seasoning, and mild enchilada sauce. Mix until the chicken is evenly coated.
  2. Fold in the freshly shredded sharp Cheddar cheese into the chicken mixture.
  3. Take a large flour tortilla and spread a generous layer of refried beans in the center. Spoon a heaping portion of the chicken and cheese mixture on top of the beans. Carefully fold in the sides and roll the tortilla tightly to encase the filling.
  4. Heat a large skillet over medium heat and spray it lightly with cooking spray. Place the wraps seam-side down in the skillet. Cook for about 3-4 minutes on each side or until golden brown and crispy.
  5. Slice the wraps in half for easy eating and serve with your favorite toppings such as sour cream, guacamole, or salsa.

Notes

  • Use whole wheat tortillas for added fiber.
  • Opt for low-fat taco seasoning to cut down on calories.
  • Incorporate more veggies by adding diced bell peppers or spinach to the filling.
