Ingredients
  

  • 8 oz cream cheese (or 1 cup), at room temperature
  • 1/2 cup black beans (drained and rinsed)
  • 1/2 cup corn (canned or frozen)
  • 1/4 cup chopped cilantro (fresh)
  • 1 jalapeno pepper (seeded and diced)
  • 2 teaspoons taco seasoning
  • 1/2 teaspoon salt
  • 24 wonton wrappers (or small tortillas)
  • 1/2 cup shredded cheese (Mexican blend, cheddar, or mozzarella)

Equipment

  • Muffin tin
  • Mixing bowl
  • Spatula or spoon

  • Baking sheet

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Lightly spray your muffin tin with cooking spray and press each wonton wrapper into the muffin cups, forming a cup shape.
  3. In a mixing bowl, combine the room temperature cream cheese, black beans, corn, chopped cilantro, diced jalapeno, taco seasoning, and salt. Mix until well combined and creamy.
  4. Spoon the creamy filling into each wonton cup, topping with a sprinkle of shredded cheese.
  5. Bake for about 15-20 minutes, or until the wonton wrappers are golden brown and crispy.
  6. Let cool for a few minutes, then carefully remove from the muffin tin and serve warm.

Notes

  • Store cooked wonton cups in an airtight container in the fridge for up to 3 days.
  • Freeze uncooked filled wonton cups on a baking sheet, then transfer to a freezer bag.
  • Reheat in the oven at 350°F (175°C) for about 10-15 minutes until crispy.
