Ingredients

Ingredients:
  • 8 ounces Medjool dates soft and pitted
  • 1/2 cup Roasted almond butter
  • 5 tablespoons Dutch process cocoa powder
  • 1/4 teaspoon Salt
  • 1/2 cup Mini chocolate chips optional
  • 1 cup Chocolate chips dark, semi-sweet, or milk
  • 1 tablespoon Coconut oil

Equipment

  • Blender or food processor
  • Mixing bowl
  • Spatula
  • Baking dish
  • Parchment paper

Method

Instructions:
  1. Step 1: Preheat Your Oven
Start by preheating your oven to 350°F (175°C). This ensures that your brownies bake evenly and come out perfectly.
  2. Step 2: Prepare Your Baking Dish
Line your 8x8 inch baking dish with parchment paper or lightly grease it with coconut oil. This will help your brownies release easily after baking.
  3. Step 3: Blend the Dates
In your blender or food processor, combine the 8 ounces of Medjool dates and almond butter. Blend until you achieve a smooth paste. If your dates are a bit firm, you can soak them in warm water for about 10 minutes to soften.
  4. Step 4: Mix in Cocoa Powder and Other Ingredients
In a mixing bowl, combine the date-almond butter mixture with the Dutch process cocoa powder and salt. Mix well until everything is fully incorporated.
  5. Step 5: Add Chocolate Chips
Fold in your choice of chocolate chips (both mini and regular if you're feeling indulgent). This will give your brownies those delightful melty pockets of chocolate.
  6. Step 6: Pour and Bake
Pour the brownie batter into your prepared baking dish, smoothing it out evenly with your spatula. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
  7. Step 7: Cool and Slice
Once baked, remove the brownies from the oven and let them cool in the pan for about 10 minutes. Then, transfer them to a wire rack to cool completely before slicing into squares.

Notes

  • Store brownies in an airtight container at room temperature for up to 3 days.
  • For longer storage, refrigerate for up to a week or freeze for up to 3 months.
  • Warm brownies in the microwave for a few seconds for that freshly baked taste!
