Method: Donut Muffins
- Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with muffin liners.
- In a mixing bowl, whisk together the all-purpose flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg until evenly combined.
- In another bowl, beat the egg and then add the vanilla, buttermilk, and vegetable oil. Whisk until the mixture is smooth.
- Pour the wet ingredients into the dry ingredients. Gently stir until just combined; do not overmix.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Bake in the preheated oven for 15-18 minutes, or until a toothpick inserted in the center comes out clean.
- While the muffins are baking, combine the granulated sugar and cinnamon in a small bowl.
- Once the muffins are done, allow them to cool for a few minutes. While they are still warm, dip the top of each muffin in the melted butter, then roll it in the cinnamon-sugar mixture until well coated.
Notes
- Store muffins in an airtight container at room temperature for up to 3 days.
- Freeze muffins individually wrapped in plastic wrap for up to 2 months.
- Reheat in the microwave for a few seconds before serving.
