Ingredients
  

  • 1 cup unsalted butter room temperature
  • 2/3 cup granulated sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • 2 1/4 cups all-purpose flour (280g)
  • 1/2 teaspoon kosher salt
  • 6 ounces dulce de leche

Method
 

  1. Step 1: Preheat the oven to 350°F (175°C).
  2. Step 2: Cream the butter and sugar until light and fluffy, about 2-3 minutes.
  3. Step 3: Add the egg yolk and vanilla, mixing until smooth and creamy.
  4. Step 4: Whisk together flour and salt, then gradually add to wet ingredients until just combined.
  5. Step 5: Scoop tablespoon-sized portions of dough, roll into balls, and place on a parchment-lined baking sheet.
  6. Step 6: Press your thumb into the center of each ball to create an indentation.
  7. Step 7: Fill each thumbprint with about a teaspoon of dulce de leche.
  8. Step 8: Bake for 12-15 minutes, until edges are lightly golden.
  9. Step 9: Cool on the baking sheet for a few minutes before transferring to a wire rack.

Notes

  • For deeper flavor, brown the butter and let it cool before mixing.
  • Chill the dough for 30 minutes to maintain shape during baking.
  • Store in an airtight container at room temperature for up to a week.
