Ingredients
  

  • 1 cup hot water
  • 6 tablespoons unsalted butter (cut into cubes)
  • 1 cup all-purpose flour
  • 1 tablespoon granulated sugar
  • 1 pinch salt
  • 3 large eggs (room temperature)
  • 2 egg whites (room temperature)
  • Vegetable oil (for frying)
  • 1 1/2 cups powdered sugar
  • 2-3 tablespoons milk

Method
 

  1. Begin by bringing 1 cup of hot water to a gentle boil in a medium saucepan. Add the 6 tablespoons of unsalted butter, allowing it to melt completely. Once melted, remove from heat.
  2. In a separate bowl, whisk together the 1 cup of all-purpose flour, 1 tablespoon of granulated sugar, and a pinch of salt. This mixture will add flavor and structure to your crullers.
  3. With the saucepan off heat, gradually add the flour mixture to the melted butter and water. Stir vigorously with a wooden spoon until the dough comes together and pulls away from the sides of the pan.
  4. Let the dough cool slightly before adding the 3 large eggs and 2 egg whites, one at a time. Make sure to fully incorporate each egg before adding the next. The mixture should be smooth and glossy.
  5. Heat vegetable oil in a deep frying pan or pot to 350°F (175°C). While the oil heats, transfer the dough to a pastry bag fitted with a large star tip.
  6. Pipe the dough into 3-inch rings directly into the hot oil, making sure to leave space between each cruller. Fry them until they are golden and puffed, about 2-3 minutes per side.
  7. While the crullers cool, prepare the glaze by mixing 1 1/2 cups of powdered sugar with 2-3 tablespoons of milk until smooth. Dip the cooled crullers in the glaze, allowing any excess to drip off.
