Ingredients

  • 2 cups all-purpose flour
  • 2 ½ teaspoons baking powder
  • ½ teaspoon kosher salt
  • 6 tablespoons salted butter cold and cubed
  • ¾ cup cold buttermilk
  • 2 tablespoons melted butter for brushing

Equipment

  • Air Fryer
  • Mixing bowl
  • Pastry cutter or fork
  • Baking sheet or air fryer basket
  • Measuring cups and spoons
  • Brush

Method

  1. In a mixing bowl, whisk together 2 cups of all-purpose flour, 2 ½ teaspoons of baking powder, and ½ teaspoon of kosher salt until well combined.
  2. Add 6 tablespoons of cold, cubed salted butter to the flour mixture. Using a pastry cutter or fork, cut the butter into the flour until the mixture resembles coarse crumbs.
  3. Pour in ¾ cup of cold buttermilk and stir gently until the dough comes together. Be careful not to overmix; a little bit of lumps is okay.
  4. Turn the dough out onto a lightly floured surface. Gently knead it a few times until it holds together. Pat it into a rectangle about 1 inch thick.
  5. Using a biscuit cutter or a glass, cut out circles from the dough. Place them on a piece of parchment paper or directly into your air fryer basket.
  6. Preheat your air fryer to 320°F (160°C). Air fry the biscuits in batches for about 10-12 minutes, or until they are golden brown on top.
  7. Once done, remove the biscuits from the air fryer and brush the tops with 2 tablespoons of melted butter for that luscious finish.

Notes

  • Store uncooked biscuit dough in the refrigerator for up to 24 hours or freeze for up to a month.
  • Reheat cooked biscuits in the air fryer for 2-3 minutes to regain their original texture.
  • For a sweeter biscuit, add 1-2 tablespoons of sugar to the dry ingredients.
